You'll first motor to the Mayan ruins of San Gervasio, the only archeological site on Cozumel, and a designated UNESCO World Heritage site. Located in a lush rainforest at the northeastern end of the island, the ruins date back to about 100 B.C. and were originally a shrine dedicated to the Mayan fertility goddess Ixchel. Explore the ruins of some 40 temples, and add your speculation as to the origin and meaning of the small red handprints that are painted on the inside of the Temple of the Hands. Next, it's tequila time at Mexico Lindo, where your hosts will take you through the process of making Mexico's most emblematic drink, starting with an introduction to the amazing agave plant, and guide you through a private tasting of the range of tequilas from clear "silver" non-aged to caramel-colored extra añejo (ultra-aged) and fruited tequilas. Your journey of taste and tradition continues, where you'll don apron and toque, and under the expert tutelage of a Mexican chef, prepare a three-course lunch.
